I SALTARI is a project founded with the collaboration of Casa Vinicola Sartori and Cantina di Colognola whose objective is, of course, to continue to improve the wine production in the province of Verona, also including the enhancement of micro–zones or valleys undervalued by now. In this way, we want to create a laboratory study.
The vineyards of I Saltari are developed on 34 hectares in the valley of Mezzane, of which 8 are adjacent to the historic home in the Turano locality in the municipality of San Pietro di Lavagno. The others are located in the hills always surrounding the valley of Mezzane. Grape varieties are exclusively native: Corvina, Corvinone, Rondinella and lesser–known varieties such as Croatina, Oseleta and Corbina, an ancient indigenous varietal that is being recovered. The density varies between 3,500 and 4,500 vines per hectare with an average production between 1.2 and 1.5 kg per plant.
I Saltari
The name is inspired by the figure of the “Saltaro” (the guard of the vineyards in the eighteenth century) which left an inscription in 1709 on the ceiling of one of the internal vaults of the historic wine cellar.
