SERVICES
A great wine is not born in the cellar, but in the vineyard. It is from this concept that all the vinification of Valentina Cubi starts. Our wines all have a proper name dedicated to the Valpolicella territory and its history, and each have a specific character. IPERICO, the Valpolicella Classico, was the first organic wine of our production. It embraces floral, fruity and pleasantly spicy notes. It enters the bottle immediately, after racking, racking and aging in steel. It is fresh and easy to drink, for every day. ILTABARRO, the Valpolicella Superiore, is obtained from the selection of the best Valpolicella wine in the cellar. In this wine freshness, fruit and soft oak notes blend wonderfully giving it great versatility. It is aged in wood for one year. ARUSNATICO, Ripasso, a wine with structure and at the same time of great freshness and fruit, as per tradition is obtained from the second fermentation of Valpolicella Superiore on the pomace of the amarone. It stands out for its bright color, its cleanliness on the nose and palate and for its great elegance. MORAR, Amarone and MELILOTO, Recioto are wines obtained from the drying of the Corvina, Corvinone and Rondinella grapes, at least 90 days for Amarone and at least 120 for Recioto. MORAR, Amarone, after three years of wood and a few years in the bottle, is sold only and exclusively when it is ready and able to be a true emotional experience. Our Amarone maintains a dry and refined style, presenting itself balanced on an olfactory level and harmonious in the mouth. MELILOTO is the Recioto. It is produced only in the best vintages and is the sweet wine of tradition, festivals and special moments. In excellent years we also produce SIN CERO, a spontaneously fermented wine without the addition of yeasts and sulphites. A wine that embraces the territory and represents its most authentic expression, also thanks to the exclusive use of native grapes.
