The character is original: craft production, respectful of the dictates of classical sparkling wine making, utmost care of every stage, from the selection of grapes destined for base must, those that allow the wine to ferment in the bottle very slowly.
It turns into Abate Nero. Patience here is at home. Wine is aged on the lees to take foam much longer than usual. Do not be surprised, therefore, if on the label you find dates that go back to harvests of some times ago.
Each step is manual, for the direct control of every single bottle. Only in this way Abate Nero reaches its charm, a sparkling wine of golden color, extraordinary in the impact with the nose, with citrus notes that gradually give way to liquorice and bread just taken out of the wood–burning oven. Linear as well as energetic, flavory and mineral, with a creamy effervescence; surprising for the freshness of its acidic structure, which guarantee finesse, class and extra durability.
