Selvole is immersed in the Chianti Classico hills, 15 minutes from Siena. It is surrounded by woods, vineyards and olive groves, and can only be reached by going through some unpaved historic roads typical of Chianti. These roads are protected by the region because the Eroica passes there, the annual vintage bicycle race event that takes place in the autumn. According to the organizers, "since 1997 L'Eroica has been an example of enhancing the environmental heritage, sustainable lifestyle, and clean cycling." The sweet landscapes and the luxuriant nature satisfy the eye and regenerate the spirit, offering a bucolic peace away from the city tension.
SERVICES
One of the oldest wineries in Tuscany, Selvole produces around 200,000 bottles of wine per year. Most of the vineyards are located in the small valley between Selvole and Brolio where Chianti Classico was born 300 years ago. Of the 40 hectares of vineyards that Selvole cultivates, half have recently been planted at very high density with Sangiovese, Merlot, Cabernet Franc and Cabernet Sauvignon. The main product of the company, the Castello di Selvole Chianti Classico DOCG is obtained with very low yields per hectare, a rigorous selection of grapes, vinification at controlled temperature to preserve the maximum aroma and is aged in French barriques for seven to nine months. Chianti Classico DOCG is an intense, soft and round wine, well structured and long in the mouth. Aging in wood, followed by at least three months of aging in bottle in search of further roundness and softness. It goes well with red meats, cheeses, cold cuts of all kinds. Uncork at least half an hour before serving.
