The Persolino winery The winery is a modernly equipped educational laboratory in which pupils, already engaged in the production of grapes, are also involved in the subsequent stages of transformation, conservation and sale. Particular attention is paid to the quality of the wines produced; for this reason, some are aged in barriques, whose precious wood essences are irreplaceable to enrich the wines with the organoleptic characteristics indispensable to improve aroma and bouquet and favor the gradual achievement of full maturity. Thanks to valentia and the constant commitment of prof. Sergio Ragazzini, coordinator of the company cellar, was born in 1978 the first "albana passita" with a limited production of 500 bottles. The experimentation continued for a long time on red berried grapes then led to the production of "L'Amabile Persolino" in 1993. New wines have been added to these, but research and experimentation continue with confidence and constancy: the goal is always and in any case accurate winemaking which, even in limited quantities, ensures a high level of quality.
