Cupertinum, the cooperative winery of Copertino, is one of the oldest wineries in Puglia. Currently it produces 7 types of wine. Between the Ionian Sea and the Adriatic Sea, between the Gulf of Taranto and the Otranto Channel, the territory of Copertino lies. In this red land, vines and olive groves alternate with harmony, olive groves with centuries–old trees with big twisted trunks and vines with the characteristic "ad alberello" cultivation, which produces a strong and generous wine.

The year 1935 represents a milestone in the history of the winemaking economy in Salento: 36 wine growers are united in the Cupertinum company, a cooperative winery in Cupertino. The goal is to take over the production of their grapes and the marketing of their wines. Today there are 300 proud vinegrowers who each year bring their harvests. The plots, in which farmers members work masterfully their vineyards, extend into the picturesque landscape around Cupertino and in neighboring municipalities. The total area planted with vines covers about 350 hectares. The grapes, from the best areas of the territory and from vineyards planted mainly with the traditional alberello–technique (bush vines), are treated with wisdom resulting from tradition and innovation, which allows to obtain excellent wines.

Strong of the experience gained over various generations, Cupertinum now works excellent traditional grape varieties: Negroamaro, symbol of the Salento wine, the main one, flanked by black Malvasia, Primitivo and white Malvasia of Lecce, and some international or national varieties now naturalized in these lands.
