The Consortium of Protection of Gavi was founded in 1993, in order to protect, promote and serve the interests relating to the Designation of Origin. It represents about 75% of the production of Gavi and has 200 member producers (including 64 bottlers), which in 2004 celebrated the 30th anniversary from the attainment of the D.O.C. (1974) and 6 of the D.O.C.G. (1998).



Its activity is divided into two moments: supervision, in collaboration with appropriate agencies, of production, vinification and bottling of GAVI D.O.C.G., and promotion of the image of the designation.



In 2004, the Consortium for the Protection of Gavi was the first in Italy to have completed the revision of the register of vineyards. Through on–site visits by inspectors and aerial photos, the area of ​​Gavi D.O.C.G. has been photographed with precision, both from the cadastral point of view – the exact surface is equal to 1,075 hectares bordered in 11 municipalities – and from the ampelographic one: in effect, we can proudly declare that in the vineyards there are only Cortese vines, for the production of Gavi in single–variety, as required by the specification.
