In Irpinia, a land that gives origin to the most ancient grape varieties of Italy, the Fratelli Urciuolo agricultural company rises, located on the slopes of Mount Falliesi. In a single site, a single vineyard, with a single type of grapes, a unique product is produced. A courageous choice, that of Maura Sarno, to grow in a single site a vineyard with only Fiano, which for her means authentic expression of the territory.
Candida, an ancient village in the province of Avellino, is located 600 meters above sea level. In a calcareous clay soil, the vines benefit from cool nights and mild summers, tolerating well the winter snow. The subsoil in spring returns to the roots heat and moisture, favoring in this way the minerality and the water supply to the vines. In winter, a great pruning is done in order to limit the amount of clusters on vines for the benefit of quality. In summer, leaf removal and pruning let grapes to be aired ensuring their perfect exposure to the sun.
The harvest takes place in full technological, phenolic and aromatic maturity, more or less in mid–October and is made strictly by hand to avoid grapes every kind of stress. The mashing of the grapes follows immediately, with a pneumatic press in closed cage. The soft pressure allows to obtain a must rich in varietal aromas. The aging of 6 months on fine lees contributes to complexity and minerality, making the finish very long.
The vinification (First Vinification: 2009) is entrusted to the oenologist Vincenzo Mercurio, who gave to this Fiano a vibrant and delicate style. The choice of a consultant with the talent and the mentality of Mercurio reflects the need for deep roots in the territory.
