The Feudo San Martino in 1993 20 acres of land destined to totally organic vineyards.The plots extend over a hilly area, with about 350-400 meters above sea level variable. A new generation of talented and passionate Sicilian winemarkers and vineyard managers produce Arancio wines that are consistent representations of Sicilian and International varietals grown in the hot Sicilian climate. Cummo – Casa Vinicola Sicania born by a young entrepreneur, Diego Maurizio Cummo, who inherited the family winemaking heritage accumulated under the guidance of his paternal grandfather.
Today vinification takes place with respect for family tradition together with the use of modern technology: the crushing soft that at the time of his grandfather was executed with presses/manual systems, now takes place with the use of soft presses to avoid that high temperature damage the product. The harvesting is done at night when the temperature is around 22/25ºC; the fermentation take place at controlled temperature by refrigerating in underground tanks, doing so will keep the perfume and aromas. The process of vinification is to be followed by a oenologist who is at the place as well from a team outside that is entrusted with the analysis of wine.
The Morreale company is situated at the foot of Mount Caltafaraci. The high quality of the wines is due to the systems of vine training and low yields per hectare, which allow a conscientious exploitation of grapes.
The Foresi family has been running the winery since 1953. Today Maria Grazia and her grandson Alessandro run this importan wine company.
The Marchesi Fezia farm produces excellent wine, oil, and has one of the most important Chianina cattle breeding.
Since 2011, in the territory of Valdichiana Romana, Mario De Lisi and his wife Monica Antonini have taken over a modern cellar located in a nature reserve in Borgo Chianaiole, in the vicinity of Ficulle. They conduct vineyards in the nearby localities Sala, Santa Cristina and Olevole with the help of a qualified staff.
Mario and Monica invest in replanting old grape varieties, then giving birth to a project constantly watched by a professional association of agronomists and oenologist. They deal with the cultivation of vineyards by means of highly selective techniques aiming to a low yield of grape per hectare (30-60 hundred kilograms), reducing the use of pesticides.
