On Sunday, 3rd November, preview of “Cibo e Libertà – Slow Food” (Food and Freedom – Slow Food) by and with Carlo Petrini on the Island of Venissa – Bisol.
Carlo Petrini, illustrious founder of Slow Food, wrote a new book “Cibo e Libertà: Storie di Gastronomia per la Liberazione” (Food and Freedom: Stories of Gastronomy for Liberation). The location chosen for its launch is Venissa, that is an historic reminder of the peasant culture of the lagoon linked to the production of wines and vegetables.
“Food will set us free if it will return to be our food, in every imaginable and existing way, according to the different cultures and inclinations. Because food is freedom”. These are the words of the founder of the Slow Food association, Carlo Petrini, to illustrate his new book “Cibo e Libertà: Storie di Gastronomia per la Liberazione”.
The book is the thoughtful and exciting story of Slow Food and its battles, with an eye toward the future, so that everyone give back the correct value to food and farm work, living food as an instrument to “defeat inequalities”. “Cibo e Libertà” wants to bring the reader to the discovery of that liberation understood as creative diversity to value and respect, to achieve a future where wellness is truly a global goal.

“Food can become an instrument of liberation. I support this in the light of a story, of the many stories that concern myself closely, because they talk about of the adventure of Slow Food and Terra Madre. An adventure that I tried to retrace based on experiences and meetings that took place along the way, on shared ideals rather than on ideologies. A journey that starts from my place and the eighties, to bring us finally to conceive future perspectives, involving even the whole world. The common goal is the liberation from the yokes, the escape from the most scandalous cages: inequalities, oppressions, slaughters perpetrated on the environment and people, the scandal of hunger and malnutrition”. “Gastronomy for liberation” for Petrini must be at the forefront in the movement for the right to food, the right to water and the preservation of biodiversity, and must fight the world hunger. Those are commitments that Petrini traces through the many stories that enhance the work of small farmers, traditional productions, education to food quality under the flag of “good, clean and fair” and that flows into the program of the “freed gastronomy”.
Why “Cibo e Libertà” in Venissa managed by Bisol?
On Sunday, 3rd November, at 10:30 a.m., Venissa hosts the presentation in national preview. Venissa today presents itself to visitors as a place of protection of its incredible scenic and agricultural value, of human labor and equipment. Carlo Petrini has chosen the historic estate of Venissa looked after by Bisol and the archipelago of Venezia Nativa to present his latest work, a place full of charm and culinary traditions that have their roots in the historical heart of the most famous lagoon in the world.
Venissa wants to be a point of excellence for anyone who wants to know, appreciate and enjoy the wealth of the lagoon environment, ranging from water/ground symbiosis to the culinary traditions, from the itineraries on waterways to the cultivation of native species, from fishing to farming techniques with low environmental impact.
In addition, “the cuisine of Venissa has a strong link with the Slow Food philosophy: educating to taste and safeguarding natural and traditional elements” – chef Antonia Klugmann explains – “Periodicity and vegetable elements are the main and founding ingredients of our dishes. Love for natural things, water, gardens and orchards accompanies us in the choice of the raw materials to use”.

Biographical notes about Carlo Petrini
Carlo Petrini was born in Bra (Cuneo) in 1949. He studied sociology and has had a constant engagement in politics and in associations. In the eighties he founded Arcigola, that became Slow Food in 1989, of which he is still today the international president. Among the many other activities of Slow Food, he conceived the “Salone Internazionale del Gusto” in Turin, the Terra Madre network and the University of Gastronomic Sciences of Pollenzo.
In 2003, Petrini received by the United Nations (UNEP), the Champion of the Earth Award “for making food and the food supply more efficient and sustainable in many countries of the world”, and “Cibo e Libertà” is his fifth text published treating socio–gastronomic issues.
