This year, in the Slow Food Guide have been included 716 companies with 1,004 oils mentioned to represent the best of Italian olive production according to Slow Food. 10 "Chiocciole" assigned. The "Slow Food Guide to virgin oils 2012" is a contribution to the knowledge of the oil, leading element of Italian food and wine culture. The maximum recognition for olive production farms are the "Chioccile". This year has been assigned on the basis of taste, territory and environmental features of 1004 reviewed. The 'extra virgin quality oil is a real universe to be discovered: many regional varieties, processing, biodiversity of Italy in the cultivation of olive trees.
In the guide can to see the worlds of Italian oil: simplicity and new technologies allow to comply with olives, organoleptic and nutritional characteristics, flavors and fragrances.
The book (published by Slow Food, 430 pages, 14.50 euros) has been edited by Stefano Asaro who said: "In the field of cultivation of olive trees Italy is undoubtedly the greatest example of existing biodiversity. 19 regions out of 21 always producing extra virgin olis ofdifferent variety, closely related to their respective territories. (...) We have a great tradition, but we havn't a great culture of extra virgin oil - said Asaro - and especially we are not able to choose between different potential in cooking. For example, it is true that you have to fry with extre virgin oil, but if it is considered too invasive taste is advisable to use the one of the previous year, always perfect but with the taste slightly attenuated. "
What's new in the guide "Slow Food at extra virgin oils virgin 2012" the best brands were mentioned to draw a map of the best olive reality and guide the consumer in the choice.
The highest award are the "Chiocciole""", symbol of Slow Food. Throughout Italy have been assigned ten: 2 to Tuscany, Lazio and Sicily, one in Lombardy, Umbria, Marche and Campania.
