30 "acetaie" (vinegar factories) of the Consortiums of Balsamico di Modena IGP and Tradizionale di Modena DOP on Sunday, 29th September, open their doors: DOP products of the territory, visits to local vinegar factories and to the places where Tradizionale vinegar ages and a musical background dedicated to Giuseppe Verdi.
In even thirty "acetaie" in the province of Modena, Acetaie Aperte 2013 will take place: the event is organized by the Consortium Aceto Balsamico di Modena and by the Consortium Aceto Balsamico Tradizionale di Modena DOP.
Acetaie Aperte is a unique opportunity to learn about the secrets of this unique condiment, that in Italy and abroad has many lovers so as to be considered among the most exported Italian products.
"The reputation enjoyed by the balsamic vinegar in the world and in particular the Tradizionale - the President of the Consortium Aceto Balsamico Tradizionale di Modena Enrico Corsini says - should not be a point of arrival but a stimulus to continue to work for the observance of a high level of attention to its authenticity and originality: each vinegar has its own personality, a different intensity and a particular production process. Acetaie Aperte presents itself as the perfect opportunity to let everyone know the true essence of this product, with tastings and guided tours among barrels, vats, fine woods and intense aromas of cooked must".
To Acetaie Aperte 2013, this year joined more than thirty consortium companies, given the achievement of last year: in 2012, thousands of people crowded the 20 participant "acetaie".
"When an event like Acetaie Aperte grows in popularity and appreciation by experts - the President of the Consortium Aceto Balsamico di Modena, Mariangela Grosoli, clarifies - it means that this formula designed to enhance the sector is valid and that on the basis of the first experience it is always possible to improve it further. This year there will be more vinegar producers that have joined the event and this means that the 2012 edition paved the way to build a synergy among producers in order to give visibility to this excellence of ours, already universally appreciated but perhaps not very known in its most subtle nuances yet".
Furthermore, this year Acetaie Aperte wanted to honor the bicentennial of the birth of Giuseppe Verdi: the famous arias by the composer of Busseto (PR) will accompany the tastings in vinegar factories making every taste and every walk on the premises of a sensory experience to 360 degrees and a moment of great splendour.
