It is true that among the white wines of the Euganean Hills, Muscat, in its sparkling, still, raisin versions, is the top with its DOCG recognition. Equally successful are the white grape varietals that are well suited to be vinified as bearers of their most famous Fior d'Arancio Muscat.
An example are the Serprina grapes that, according to some scholars, would even be the progenitors of the grapes from which we make Prosecco. According to others, it would be instead a clone result obtained by the work of research by Giuseppe Tocchetti of Carrara S. Giorgio (CSG code clone) of old vines of Serprina grapes cultivated for centuries in the hills. A kind of typification and "clonisation" in existing installations of Prosecco has been experienced. The fact remains that, like the Prosecco grapes, from the Serprina a no less captivating wine is obtained. A doc sparkling wine of lovely pale yellow color with a fruity fresh and delicate aroma that can be felt on the palate, but not in an arrogant way, while leaving a firm flavour of ripe fruit. All features that make this wine a spirited and lively type of white wine definitely ideal for the summer season and to be paired with light dishes, based on seafood, or to be consumed as an aperitif. Obviously, it should be served at a cool temperature, the ideal is around 6 degrees. For those who care about the points of their driving license, it must be said that its alcohol content is on average from ten to eleven degrees. A real "bonus", this latter peculiarity, which make of it a well liked wine among a wider and wider audience that, in line with the most in vogue needs and trends, more and more often asks to drink wines with low alcohol content and not so strong as to prevent an easy and drinkable tasting. In short, a type of wine, as Serprino, that in the moment of its tasting constitutes a moment of pleasure that should be as unconditional as possible. Above all, however, it should respond to the increasingly urgent demand for quality, despite the simplicity of indigenous grape varieties carefully vinified. Those wines that, as French people teach, with their terroir, identify a territory of prone vocation to a specific wine production. That in the case of the Euganean Hills, they see in the DOC Serprino one of its most emblematic and lively bearers.
