From the DOCG of the same name, where it is present also as unique component (and minimum 85%), a delicate and particular grape variety, which only in San Gimignano finds the ability to express itself in a qualitatively high manner. The scents in his youth recall saffron, wild flowers, white and yellow fruits and a very characteristic final flavour between almond and savory, to evolve over time in an interesting way, especially after aging in wood.
