Today, "Ai Gondolieri" is one of the best restaurants in Venice, but its origin dates back to the first decades of the twentieth century as a place of meeting of the residents and workers of the area. His sign is in typeface of the 40s and is protected as a historical symbol by the Municipality of Venice. The place was then a place where to eat simple dishes, to drink a glass of wine and play cards. The current owner, Giovanni Trevisan, has restored and refurbished the venue since 1987 and has already created a meeting place of gracious hospitality and culinary arts.
The restaurant is located in a quiet area of Venice, near the Guggenheim Foundation and the Gallerie dell’Accademia. The restaurant consists of two rooms and a bar, situated at the entrance, where you can still drink a glass of wine or an aperitif. The menu is a counterflow and winning idea: not a standard fish menu but a number of dishes inspired by seasonal products and very special meats.

The story of Do Forni leads to the most characteristic and ancient traditions in the city. In the golden years of the Serenissima Republic, in effect, here there was the bakery that produced bread and sweets to the nearby convent of San Zaccaria (Doge’s Palace) and a small part was used as a typical Venetian tavern (Cicchetti). After the fall of the Venetian Republic in 1797, even in the premises previously used as bakery, the activity of the tavern was developed.
A Restaurant of the nineteenth century, always with the same name, the venue since 1973 has been owned by Mr. Eligio Paties who, with his passion for cuisine, experienced as culture as well as a vocation, and with his innate sense of welcoming, managed to make it a popular destination for all those who travel to Venice and want to be welcomed in accordance to the noblest traditions of hospitality.

l DO FORNI is characterized by a traditional Venetian cuisine, therefore, mainly of seafood, which offers fish and shellfish of the Adriatic Sea, according to recipes handed down by the Venice of the past centuries and embellished with seasonal vegetables and delicate sauces, but also for a refined interpretation of the Veneto and Italian cuisine that combines the use of meats and local vegetables with the influence of international gastronomy.
Large and qualified is also the restaurant’s wine cellar; personally supervised by Eligio Paties, it offers its customers the best labels from all the Italian regions, the most prestigious French wines and champagnes as well as a wide selection of foreign international production.

Our link with the tradition starts by the historical name of the venue. "Vecio Fritolin" has its roots in the "fritolini", or places where since the eighteenth century people could buy freshly fried fish. The custom failed with the entry into force of the ban on fireplaces with open fires. Historical is also the seat that retains the original architecture of the sixteenth century, located in Calle della Regina, where the Queen of Cyprus, Caterina Cornaro (1454-1510) was born, a wealthy descendant of a noble Venetian family.

A native Venetian of the Giudecca island, where she has cultived a special passion for the city and its traditions since she was a girl.
In 1985 she began her activities as a restaurateur. After managing several venues, in 2001 she took over the "Vecio Fritolin", where from the first day she has been offering varied refined approaches to enrich the tradition of Venetian cuisine and vibrant new interpretations. Here the freezer is completely banned: the quality of the ingredients, strictly fresh, seasonal, allow us to offer guests a variety of culinary delights compatible with the every day products from the Rialto Market. The catch is always of the day, and chosen personally by Irina and by the chef in the counters of the fishermen. Each dish is enriched with vegetables and fresh herbs.

The kitchen offered by Il Ridotto Restaurant is rooted in the products of the soil and the sea, where absolute progatonists are ingredients of the highest quality. The dishes offered are the result of a research, always intelligent and never exasperated, that changes depending on the season and, obviously, on the inspiration.

The Al Covo restaurant began as a "research laboratory", for the enhancement and preservation of the products of the Lagoon of Venice, its islands and the immediate hinterland. The products used in our kitchen are, almost all, of local varieties, both with regard to fresh fish, mainly coming from the lagoon or the Adriatic Sea – and for fruit and vegetables (from the gardens of Cavallino, Treporti, Sant’Erasmo, Vignole). Our meats are of the "Bianca Piemontese" variety – Slow Food Presidium – and supplied by the Butchery of Franco Cazzamali. The fresh pasta, desserts, fruit jellies, jams, products in oil and vinegar are homemade. Our fish is cooked without butter, only with extra virgin olive oil of the highest quality. Our kitchen aims to a clientele of connoisseurs, attentive not only to the shape of the dishes but especially to the quality of the raw material and its fragrance and freshness. Particular attention is paid to the wine list that has over 200 labels of the most famous domestic and foreign terroirs with emphasis on natural and biodynamic produce.
