From the Istrian tradition, in the vibrant and sometimes turbulent history of our lands, various people met: mainly Italians, Slavs and Germans. Everyone brought its contribution to the civilization that took shape here, including culinary uses and foods. From this original intersection, the gastronomic traditions of our land was created. A tradition made of a wide variety of dishes, which reflects our history: the essentiality of Mediterranean flavors – in the case of Alla Dama Bianca, particularly from Dalmatia " sometimes combined with full"bodied flavors of the dishes derived from the Balkans and Central Europe.
