Flours of Flôr and Formandi, popular autumn event dedicated to two of the most typical products of the Friulian mountains (i.e. traditional flours and mountain cheeses ) returns on Sunday 20 October to Sutrio , a characteristic village in Carnia.
Starting at 10.00, a delicious tasting trail will wind through the streets of the town, featuring traditional dishes made with flour and ancient grains , prepared by local associations. You will be able to taste Tocj in braide, Brût Brusât, Miege lune cun farine di cjistignes and other dishes that were once prepared in every home and are now still offered in some trattorias and restaurants. Among the very special flavors to try there will be, among others, Panade cun las frices, Blecs cun ont e scuete fumade, Gnocs di brundui, Pete cun la marmelade . Accompanying craft beers from 5 breweries in Friuli Venezia Giulia (BONDAI from Sutrio, Casamatta from Enemonzo, Birrificio Di Mont from Cedarchis from Arta Terme, Birra di Naon from Porcia and Birrificio Foran from Castions di Strada).
A journey full of taste - between traditional dishes and craft beers - that will celebrate the local peasant culture. A rural and genuine culture, whose other sovereign is the Malga cheese , to which Formandi will be dedicated on the same day, a market-exhibition of the best dairy production of the Friulian mountains, produced in the 2024 mountain pasture season, accompanied by the rustic and steaming polenta of the local polenta makers. The tasting will be held in the Ort del sior Matie, the open-air living room of the town, in via Roma 35/B.
In the afternoon, at 4:00 p.m., you can also attend an unusual Auction of mountain cheeses, which will give you the chance to win particularly valuable and usually unobtainable forms. Aimed mainly at professionals (restaurants, cheese shops and grocery stores) interested in purchasing the 2024 mountain cheeses and special sizes, the auction will be held at 4:00 p.m. in Sala Kaiser (viale Val Calda, 1). During the auction, chefs Pietro Toffolo De Piante from Osteria Da Nando in Mortegliano and Giacomo Della Pietra from Osteria da Alvise in Sutrio will prepare a dish for participants featuring mountain cheese. Paired with the dish, wines selected by Borderwine – Natural Wine, the cross-border artisanal wine show. Alongside Farine di Flôr and Formandi - which are part of the local entertainment activities provided for by the Bando Borghi PNRR “Il Bosco nel Borgo-Il Borgo nel Bosco” - there will be workshops (from one on aromatic herbs and cheeses to one on how to reuse stale bread) , moments of learning and fun for young and old , and other initiatives such as a visit to the Mulino di Croce di Cercivento and the Fattoria diffusa.
