Pinot Chardonnay

Description of the wine:
Sparkling wine made from the vinification of Pinot Blanc and Chardonnay.
Organoleptic characteristics:
The Pinot Chardonnay has a straw yellow color, sometimes with greenish glares and has a fruity odor characteristic aroma. In the mouth it is full-bodied, dry, fresh, fine and persistent perlage.
Serving suggestions:
Dishes of meat and fish, vegetables and fish fried food, excellent as an aperitif.
Production area:
The provinces of Alessandria, Asti and Cuneo.
Production techniques:
Classical method: in the spring following the harvest the blend of the grapes is implemented. These are then combined with a part of the previous wines, to which yeast are added, that, absorbing sugars, release carbon dioxide. As a result of this process the maturation of wine begins (15-36 months). Then, the phase of aging begins, which occurs due to the expulsion of yeast residues.
