Malic acid, together with tartaric acid is an organic acid, naturally present in grapes and in many other fruits. In effect, when the grapes ripen, the malic acid level decreases, and, even after that the must is converted into wine, its quantity can be reduced further transforming it, through a process of malolactic fermentation, into lactic acid.
