Fruity

A wine is fruity when to the nose and the mouth has a pleasant hint of ripe fruit (Veronelli). Raspberry, strawberry, blackberry, gooseberry, blackcurrant, blueberry, prune, pear, peach, pineapple, apple, apricot, currant, fig, cherry, plum are among the many fruity flavours typically found in wines. Why has wine fruity aromas, since the only fruit present are grapes? This is due to a surprising process: while the grape juice ferments and becomes wine, a complex interaction takes place between the alcohol of wine and organic acids, which in turn create mixtures that mimic aromas and flavours of other fruits.
