Barricato

A "barricato" wine has the aroma and flavour of the wood in which it is aged. This allows wine to age slowly through a redox process facilitated by the wood fibers.

Type: some types of wood for the aging barrels are oak, cherry–wood or beechwood.

Age of wood: the more wood is young the stronger will be the flavor that this latter will give to wine.

Taste: a "barricato" wine stands out for its flavour reminiscent of vanilla, smoky and toasty, the latter due to toasting which is carried out within the barrel with an open flame.

Curiosity: in cheap wine defined "barricato" this practice hangs about: in effect, wine takes on the flavor "of wood" because in the tanks of maturation of the wine in itself wooden logs or wood chips are added.
